A couple of years ago I started making chocolate chip cookie dough, and the idea just didn’t sit well with me.
I had already got a new oven and couldn’t use a traditional cookie dough pan.
So I set about building a little homemade version of the cookie dough I’d used so many years ago, and it was quite good!
I made it at home for a week and it turned out fantastic.
But then I decided I needed a little more help with the recipe.
So here it is.
It’s made in a double boiler, so you can easily get the dough out of the fridge.
It’s also gluten-free and vegan, so it’s perfect for a breakfast treat.
If you’re looking for a more traditional cookie, try my version of a chocolate chip bar.
If your dough is a bit more dense, then make this as a bar.
To make the cookies, mix together the flour, baking powder and salt in a large bowl.
Add the butter and the eggs and mix well.
Add in the melted chocolate chips and mix again, adding more flour if necessary.
It should be smooth, and almost like chocolate syrup.
The dough should be firm enough to roll into a log, and then flatten out into a disk.
Now, you can keep making these cookies until you’re happy with how they turn out.
If they don’t turn out right, don’t worry, just cook them in a hot oven for about 15 minutes until the edges are golden and the dough is set.
The recipe is suitable for making 2-3 cookies per day, depending on the thickness you want, and is a good idea to make each day as you go.
I made mine for breakfast with some peanut butter and avocado and a cup of chocolate chips, and enjoyed them.
But you could easily make them as a batch and eat them after breakfast, too.
They’re great for breakfast too, and they’re also great for a day’s worth of healthy snack ideas.
You can make these as you normally would for a big batch, but you can make the dough separately and keep the extra for your next batch.
